- Brinjal : 500 gms
- Onion : 2 finely chopped
- Garlic : 6-7 Pieces
- Ginger : 25 gram chopped
- Black Cumin Seeds : 1 tea spoon
- Fenugreek Seeds : 1/4th tea spoon
- Potato : 2 middle size
- Green Chilli : 7-8 finely chopped
- Tomato Puree : 1 cup
- Red Chilli Powder : 1 tea spoonful
- Coriander Powder : 1 teaspoon ful
- Cumin Powder : 1 teaspoonful
- Turmeric Powder : half tea spoonful
- Tamarind Pulp : 2 tea spoonful
- Mustard Oil : 500 gram
- Salt : as per taste
- Sugar : as per taste
- Coriander Leaf : 50 gram
- Ghee or Butter : as per your choice for garnishing
- Fresh Cream : 2 table spoonful
- Shahi Garam Masala : 2 tea spoonful
Method:
First of all put frying pan on the gas.
Now add mustard oil in frying fan.
When oil is warm then you add black cumin seeds, few fenugreek seeds and fine Julian cut onion.
When all these stuff get fried well and onions' colour turns brown then you give mash potato, garlic paste, ginger paste, green chilli paste, turmeric powder, red chilli powder, cumin powder, coriander powder, salt and sugar as per your taste.
Now add ½ cup water, tomato puree and fry it properly.
When ingredients get fried properly, turn off the gas.
Now put the gravy on bowl. Now you take the Brinjals and cut it in 4 parts without full cutting.
The brinjals should stay joint from its head.
Now stuffed the gravy into the brinjals and put it on another plate.
Now turn on the gas.
Put the pressure cooker on it.
Add ghee or butter and put the brinjals on it. Now let it boil until one whistle.
Now, switch off the gas.
Your stuffed brinjal dish is ready now. Now put all brinjals on a plate and garnish it with coriander leaf, Julian cut green chilli and fresh cream.
Serve with hot Parathas or Chapati
